Ganache Decoded: Learn the chemistry of emulsions to create stable, silky-smooth fillings. This includes infusions (herbs, spices, tea) and fruit-based ganaches with extended shelf life. Molded Bonbons: Advanced techniques in cleaning and polishing polycarbonate molds, airbrushing with colored cocoa butter, and creating thin, crisp shells.
